Bosque Brewing gearing up to open brunch spot near downtown
ALBUQUERQUE, N.M. — A local brewing company is working to expand its menu from beer to brunch with a new restaurant concept in the heart of Albuquerque.
Bosque Brewing is in the process of transforming the old Vinaigrette location on Central into Smothered. At Smothered, they hope to serve local breakfast favorites with a twist.
“We wanted to go with a very fun and vibrant kind of atmosphere. Right now, we kind of think that the market is kind of ripe for a brunch concept,” said Jotham Michnovicz, the chief development officer and owner of Bosque Brewing.
Michnovicz said a brunch restaurant has been in the works for the past six years.
“Recently, the laws changed, allowing you to be able to do brunch cocktails earlier in the day on the weekend and Sundays and that sort of thing,” he said.
Aside from the cocktails, they plan on offering a coffee bar while people wait and those unique food options.
“We’re going to have chorizo gravy for our biscuits and gravy and for the fried chicken sandwich that we have for the housemade biscuits. We’ve got a really kind of different take on chilaquiles,” Michnovicz said. “It’s a pickled golden beat chilaquiles with strawberry ranchero sauce on it and goat cheese, so it’s kind of different.”
Still, they have a ways to go. First, they’re looking to hire around 30 people to join their team. Then, they expect to get going by the beginning of March.
